This is a recipe for
chantefable who requested: fish dish with no wheat, tomatoes, milk/cream, or potatoes involved; I hope this suits. It was incredible hard to think of something that fit all that. I cheated a little. LOL.
Lemon Sole & Carrot Bundles
1 lb sole fillets
4 med carrots (julienned)
1.5 cups of crumbles wheat-free crackers (not sure why you were looking for something without wheat, but you can either leave this off, or use some wheat-free option)
½ tsp salt
¼ tsp pepper
2 tbsp lemon juice
Pre-cook julienned carrots until ‘crisply tender’ – I do this in the microwave
Melt margarine in a sauce pan and add: crackers, salt, pepper, lemon juice. (set aside)
Divide the carrots to be spread evenly among fillets. Place bundle of carrots in center of each fillet and roll.
Place fillets, seam down, in a baking pan.
Cover with crumble, cover with foil.
Bake for 10 minutes at 375F (190C)
Remove and cook for 8-10 minutes longer.
