The sweetness of mead really depends on the brand you get. Some of them can be sickly sweet, some like moniack just have a strong honey flavour with the sweetness behind it (I find moniack less sweet than Port or sweet sherry), others can be very dry indeed - the taste of the honey remains with all the sweetness removed.
