My favourite breakfast gets made every Sunday after Church. It's nothing fancy, but yeah... it's still my favourite, so here you go:
A simple breakfast sandwich
It is eggs, cheese and kielbasa on a toasted English muffin. Sound like something you get at McDonald's? You're not wrong. :D
Here's how I do it:
Scrabbled Eggs (yes, most people know how to make scrabbled eggs, but I thought I should include it).
3 eggs
2 tbls milk
pinch salt
pinch pepper
Whisk until very thin, and full of bubbles.
Add to a buttered non-stick pan. Cook at low heat and slowly scrap the bottom of the pan with a spatula as the eggs begin to cook. Remove from heat as soon as the eggs are cooked but still 'shiny' (otherwise they will get overcooked).
On 'bottom' of a toasted English Muffin add cheese (any kind - I like a medium cheddar, but a lovely jalapeno Havarti is a great way to change it up)
Add scrambled eggs
Add thinly sliced kielbasa (or fried ham or bacon depending on what's in your fridge)
Top with the 'top' of the English muffin.
Yes, very simple. But it's a fun to change it up and you really can't go wrong. :D
