Mexican Tortilla Soup for vaysh

My darling
vaysh11, I have very few vegetarian recipes. This one likely lacks protein, but I'm sure you'll know how to tweak it to meat meet your needs.
This soup is a fantastic thing to serve at a small gathering. It is very social meal in that you spend a lot of time passing bowls to each other as everyone finds their perfect bowl of soup. Also: Delish!
Mexican Tortilla Soup
This soup is a meal unto itself.
1 can tomato sauce (this is not meant to be a flavoured Spaghetti sauce, but simply pureed, cooked tomatoes)
1 can water
1” cubed ginger root--- grated or finely chpped
4-5 dashes hot sauce (I prefer cholula)
Bring all ingredients to a bowl and let simmer for awhile (like until the guests arrive/have finished the first round of margaritas) add more hot sauce to taste. This soup is served with items to be added at the table (see list below), so the soup base can be a bit spicier than you may think.
Serve the tomato soup in large bowls only 2/3 filled.
Each person is to dress their own soup at the table with the following toppings (prepared ahead of time and placed on the table in pretty bowls):
-Tortilla chips (unsalted if you can find them. Guests break the chips directly into their soup)
-shredded cheddar cheese
-sour cream
-fresh parsley (chopper)
-fresh chives (or green onions)
-avocado (chopped in small pieces - remember to splash with lime to avoid oxidation)
Have remainder of soup available to top up bowls as required.
