A recipe for [livejournal.com profile] treacle_tartlet who asked for Pecan Pie. This is a super easy recipe that freezes really well. I’ve also included a huge recipe for pie dough (great for feeding an army! Or if you want to make pie dough only once every 6 months... )


Pecan Pie
3 eggs slightly beaten
1 cup corn syrup
½ cup brown sugar
¼ cup white sugar
½ tsp salt
1 cup pecans
Mix the first 5 ingredients until well blended. Stir in pecans. Pour in a deep-dish pie shell.
Cook 50-55 minutes at 350 degree F
Let cool.
NB: I always double this recipe and makes three regular size pies (rather than one deep-dish) as they set nicer. These pies also freeze really well.

Do you need a pie crust recipe?
Pie Dough
This makes tons and tons but you shape the dough into billiard ball size balls and freeze them to use anytime. This dough is very ‘elasticy’ so (once thawed) can be rolled really thin. It’s extremely easy to work with, though not as flakey as most doughs.

16 cups all-purpose flour
3lbs Tenderflake
1 lb butter
20 oz water
4 oz vinegar
6 tsp salt
Refrigerate for 1hr before rolling into balls.
